This brewery production management control system is aimed at the small and medium-sized beer production enterprises in the production process using conventional instruments for control, it is difficult to ensure the correct implementation of the production process, so that the beer quality is not stable, not conducive to the expansion of reproduction shortcomings; The control mode of beer production process was improved and an optimal control system suitable for small and medium-sized beer production enterprises is developed.  Distributed computer control system (IPC-PLC DCS) is composed of industrial control computer and programmable logic controller. In order to improve the reliability of control, the system adopts two-level distributed control structure. The system control software adopts the configuration software based on the graphical interface. As the beer fermentation process is affected by many interfering factors, the system has large inertia, large-lag and serious nonlinear characteristics, and applies the adaptive fuzzy control algorithm of fuzzy parameters based on the deviation of the adjusted variables and the variation trend of the deviation. Aiming at the problem of multi-source heterogeneity of the data of the existing equipment in the beer production control system, a protocol conversion module was designed to realize unified collection and management of all variable data in the control system.  The brewery production management and control system is reliable, practical and cost-effective to meet the technological requirements in beer production. The fuzzy control algorithm has strong adaptability, high control accuracy, control error no more than 0.4℃. The system has good operation effect, good dynamic characteristics of fermentation process and stable quality of beer with small fluctuation in production. The system is widely used in the production of craft beer.
