Pullulan is a water-soluble homopolysaccharide produced extracellularly by the Aureobasidiumpullulans.It is a linear α-D-glucan made mainly of maltotriose repeating units interconnected by α(1→6) linkages and  its unique linkage pattern is believed to be responsible for the structural flexibility and solubility of pullulan,resulting in distinct film- and fiber-forming characteristics not exhibited by other polysaccharides. In addition, pullulan is non-toxic, non-mutagenic, non-carcinogenic, odorless, tasteless, and edible. Therefore, pullulan hasnumerous applications in several industrial sectors such aspharmaceutical, food and cosmetic industries and its economic importance has been well established. A. pullulans (CGMCC No. 11602), which produced pullulanwith high yield and no pigment, was obtained through ourlaboratory breeding. Pullulanconcentration reached 65g/Lwith a yield of 0.65 g/g sucrose in a 5000 L fermentorafter 72h ~ 96 h fermentation period. Pullulan molecular weight (Mw) could be adjusted to10kDa to 3200 kDathrough nutrients and environmental conditions optimization. The downstream process is quite easy and flexible with high recovery yield (>80%) and good product quality.
